Catherine Yoo brings her extensive experience from across the hospitality world to celebrated Chef Gavin Kaysen’s Spoon & Stable in Minneapolis.
She began her journey in the hospitality industry early on during a high school summer internship at the Holiday Inn. She gained true satisfaction in being able to bring joy to her guests, and from then on, knew that this was going to be her career.
Catherine attended Cornell University’s School of Hotel Administration in Ithaca, NY, and during her schooling gained experience by interning locally and internationally with The Statler Hotel in Ithaca; Hilton Orange County in Costa Mesa, CA; and Park Hyatt Saigon in Ho Chi Minh City, Vietnam.
After graduation,Catherine went to work for Four Seasons Hotels & Resorts in Washington, DC, in a management training program. There, she learned her ropes in two departments, stewarding and front-of-house operations at Bourbon Steak, a Michael Mina restaurant. Her tenacity led her to be part of the opening team for the room service department at the Four Seasons in Baltimore, for which she was responsible for setting up systems for smooth operation at the 250-room hotel. During her tenure, the hotel was awarded five stars and named one of the Top 100 Hotels in the World. However, she missed the guest interaction that she enjoyed in restaurants. She decided to move to San Francisco with the Mina Group as a manager at Bourbon Steak in the historic Westin St. Francis Hotel downtown. Catherine then transferred back to her former stomping ground in DC as a manager at Bourbon Steak in the Four Seasons, overseeing the $12 million restaurant inside a five-star, five-diamond hotel. Following her time at Bourbon Steak, she went back to the West Coast as the assistant general manager of RN74 Seattle.
